You should add volume , if you look carefully it isn't flat.
The surface is elevated , look at how light interacts with it surface.

if I wanted a normal from that picture I wouldn't sculp it.
I would have used nvidia filter or crazy bump.
understand what I am explaining to you.

The picture has alot of dents and it isn't perfect.
make it perfect and clean , turn into a artwork.

About the polycount : I see your machine can handle more then 300.000 polygons.
Let's say : there is no polycount limit , as long you're machine can handle it.

High poly : polycount should be under the 300.000.
If you can use zbrush it would be awesome.

When i started learning 3d on a daily base in 2003 , I made the same heads like you do.
Because I was studying the software , rather then focussing on art.
balance , gesture , weight , rhytm , Now i have to catch up , so much to learn in so little time.
U think software is hard ? try to understand art.

All I care about is what you can do , and you simply lack experience and the motivation to practice your art.
This is a not school.

I use reference when it's avaible you should do that to.

get rid of the poles , add turbosmooth and load it into zbrush and start brushing.

takes ofcourse practice , but you will be alot better off.
