the Nvidia 9xxx cards come out sometime this year i believe. All I've heard is that SLI, for the money, is not worth it.
It's usually not. There are some people who insist on gaming on high resolution wide screen displays (which I personally think is silly), and for them an SLI system is necessary to get playable framerates. However, at best you will see a ~50% increase in performance with maxed out graphics settings.

Others, like Mr.Mic and Goodkebab, work in the rendering business so they need the extra power and GPU memory.

For the average gamer with your typical 1280x1024 LCD or 1024x768 CRT, an SLI system is a waste of money.

I believe rendering is mostly done with CPU and RAM. Unless it uses the specialized graphics cards, like Quadro FX.

Actually, If I remember correctly the GPU will only influence on the viewport in Maya/Max/whatever package you wanna use. Rendering is pretty much on the CPU but I guess that fits under extra power.

This is true. Workstation cards are pretty much only good for hardware rendering. Their specs blow for gaming too.

One of the biggest reasons for me looking at SLI is to increase viewport performance when working with high poly models for normal map generation. I just haven't been able to confirm that 3dsmax, mudbox or zbrush will see a benefit from SLI. The extra memory alone is pretty much worth it to me. If any of my 3d apps are unable to make use of the second card then I would be better off waiting for a 1gb or greater card to come out.
